Roasted Vegetables

Simple as it sounds it's an excellent dish to make and looks really colourful as well as being healthy.

The vegetables I usually use are:
peppers
onions
asparagus
mushrooms
peeled cloves of garlic

some people also like the following:
butternut squash
squash
aubergine

drizzle a little olive oil over the oven proof dish, season the chopped vegetables with thyme, salt, pepper, put in a preheated oven at ~gas mark 7/220oC until the vegetables get a nice brown edge to them. usually this takes me 15-20 mins.
